Weight loss: 151 pounds

Gina Canakis was 298 pounds when she decided she wanted to make a change in her life. Losing her father to extreme obesity in 2013 motivated her to lose weight. She pursued weight loss surgery, but was told she would have to drop 10 percent of her weight naturally first. Once she started losing weight, she chose to continue her journey without surgery, she told Everyday Health.

She dieted for one year and lost 60 pounds, but she said she realized she needed to overcome her dislike of exercise to reach her goal. Canakis started small by walking in her driveway and she worked her way up to using the treadmill and bike machines at the gym.

Her secret to dieting was to eat her biggest meal in the morning so that she could burn it off during the day. She replaced soda with flavored water and sweets for yogurt. She encourages people who are beginning their weight loss journey to start small and keep a journal of “wins,” no matter how small.

Special Endive Treat


1/4 Cup Walnuts

2 1/2 Tablespoons of Honey

1/2 Cup Balsamic Vinegar

2 Tablespoons of Orange Juice

12 Endive Leaves

1/2 Cup of Feta Cheese

2/4 Black Pepper


1. Preheat oven to 300 Degrees.

2. Combine Walnuts & Honey.

3. Combine Honey, Balsamic Vinegar and Orange Juice in small pan. Bring to a boil.

4. Fill each Endive with Special Ingredients.

Today is the day that you should definitely go to the Gym. I am confident that you will feel better about yourself. Generally, training helps you to feel all around stronger. Keep this in mind.. working out allows you to eat more quality food during the course of your day- which is a terrific incentive to get moving.

Little by little- your clothes will fit better by consistently training. After a long day at work- your body will feel calmer by training. 1 Cup of Mozzarella Cheese

1 Tablespoon Peeled Shallots

3 Tablespoons of Light Mayonnaise

1 Teaspoon Vinegar

1/4 Teaspoon of Salt & Pepper

4 Slices of Light Bread

10 Tomato Slices

7 Slices of Bacon


First, Combine above ingredients except for Mozzarella Cheese, Bread and Bacon in Small Bowl. Next, top Mozzarella Cheese, Bacon in between the bread as well as the above ingredients.

Amazing BBQ Chicken


1/2 Cup of Hoisin Sauce

3/4 Cup of Orange Juice

3 Tablespoons of Honey

2 Tablespoons of Vinegar

3/4 Tablespoons of Salt

3 Garlic Cloves

6 Ounces of Chicken


First, pre-heat your oven. Boil the above ingredients for about 3 minutes. Place Chicken on Aluminum Foiled Pan & bake for about 35 minutes. Continue brushing the Chicken with the Special Sauce.

Chicken Corn Chowder Soup


2 Tablespoons of Olive Oil

1 3/4 Cup of Chopped Onion

1 1/2 Tablespoon of Thyme

10 Ounces of Chopped Skinless & Boneless Breast

1 1/2 Cups of Unsalted Chicken Stock

2 Cups of Sweet Corn

1 Teaspoon Salt & Pepper

1/2 Cup Canned Coconut Milk

1 1/2 Tablespoon of All- Purpose Flour


Heat Olive Oil in a pan low heat. Combine Onion, Thyme and Chicken. Stir a few minutes. Add Chicken Breast, Salt, Pepper & Corn for 10-15 minutes. Next, combine Flour & Coconut Milk & keep stirring into soup has thickened with all of the above ingredients combined together.
