Zucchini & Onion Dish

INGREDIENTS

2 Tablespoons Olive Oil

1 1/2 Large Onion Thinly Sliced

1 Tablespoon Tomato Paste

2 Teaspoons Grated Lemon

1 Teaspoon Fresh Thyme Leaves

3/8 Teaspoon Salt

1/4 Teaspoon Black Pepper

1 1/2 Pounds of Zucchini Diagonally Sliced

1 Cup of Grated Parmesan Cheese

DIRECTIONS

1. Heat a large skillet over medium heat. Add 1 Tablespoon oil to pan, swirl to coat. Add onion, cook for approx. 6 minutes, stir often. Add tomato paste, cook 2 min. Add thyme, 1/8 teaspoon salt & pepper and cook for 2 minutes.

2. Pre-heat broiler to medium-high.

3. Arrange Zucchini on pan. Sprinkle 1 Teaspoon of oil. Broil for about 7 minutes. Drizzle the rest of salt.

4. Pre-heat oven to 375 Degree’s.

5. Spread mixture on Dish. Arrange Zucchini over onion mixture.

6. Pre-heat Broiler to high.

7. Uncover Zucchini & Broil for almost 2 minutes- until lightly browned.

Grilled Salmon & Special Cucumber Yogurt

INGREDIENTS

1 cup low-fat yogurt

1 1/2 teaspoon dried dill

1 1/2 salmon filet

Cut in 4 pieces

salt and pepper

DIRECTIONS

1. In a regular bowl, combine cucumbers, yogurt, garlic and dill. Mix well. Cover and refrigerate for over 15 minutes.

2. Pre-heat grill for medium- high. Sprinkle salmon with salt and pepper. Cook salmon, skin side down for 4-5 minutes. Use a spatula to flip salmon. Grill until opaque for another 5-6 minutes.

3. Properly season cucumber with salt & pepper. Serve on a plate with cucumber-yogurt salad.

vintage-swimsuits_largeMost woman usually dread summer months.  When we expose so much more of our bodies to public view, we may feel nervous about how we appear.  Shame and embarrassment can keep us from the beach and other fun in the sun activities.  Rather than focus on your appearance, give attention to the excitement and laughter you could be experiencing with your family and friends.  Feel the exhilaration of swimming in the pool or ocean.

Take note that there are many, varied types of swimsuits and cover-ups that are on the market which could flatter your body.  This may boost your bathing suit confidence.  Pick a suit that makes you feel comfortable and at your best, no matter what your size is.  Enjoy every moment of your summer! Helpful Ideas for your First Race

raceA helpful tip before crossing the finish line of a marathon is to dress properly before your race.  Take note that it is best for a new runner to under dress.  If you know that the temperature will be cool before a race, please pack a jacket than remove it before starting the race.  Be certain to pack your bag with items such as sunglasses, hat/visor, sunscreen, water, post-run snack and a dry change of clothes.  Always feel complete before a big race so you can feel re-assured that this will be your best marathon ever!

Warming up is vital before every race.  In addition to get the flood flowing to the muscles, it puts you in the right frame of mind before proceeding to run the race of your life.  Also, doing a basic warm-up allows you to shake off your nervousness.  Serious runners should arrive early before their official  start time.  In addition to this, put your bib on the front of your shirt because it can make officials identify you easier.  Weight Cliquers, you are all set!  Get moving!

How to Conquer Less Intimidation in the Weight Room

weight trainingStrength training has countless benefits for anyone who wants to look and feel better.  Trying something new can feel nerve wrecking because many people feel unsure of themselves in the fitness realm at the gym.  I have come to acknowledge that when I feel scared or intimidated to begin my weight training at the workout facility, I remind myself that there are many appealing exercises that can be performed, daily.  This will help you to feel more comfortable and self-assured.  First and foremost, educate yourself and have a plan so you can complete your strength training program.

Always note that there are plenty of super training programs that have produced fabulous results.  It is simple, choose a workout, learn a routine, follow it for 5-10 weeks and then assess your progress.  Always keep in mind that by strength training, bodyweight exercises may be all you need to get quicker results.  It certainly can be comforting if the machines where you train can seem confusing or complicated to you.  Many of the staff are equipped to help answer questions about how to operate, set up and adjust the machines.  Hoping you feel wonderful and confident, like I did when I left the gym today!

Enjoying my Experience with a Personal Trainer

th1ZKJFB3UI noticed that I was comfortable with the elliptical, but I stopped making gains in my weight loss.  I had reached a plateau and I was also feeling bored.  My work-out buddy convinced me that I could enhance my performance by having a personal trainer.  Initially, I felt uncomfortable because I am highly independent.  Despite the reservations, I took the plunge!

My wonderful personal trainer taught me how to use exercise equipment including bosu ball, kettle bells and light weights.  The routine was challenging and invigorating.  Just when I thought I could not exert another muscle, he coached me to go beyond what I thought was my limit.  For Example, the trainer instructed me to flip a heavy tire and perform jumping jacks at each repetition.  I did not think I could do it, but I did!  The advantage of using a trainer is you develop correct technique and you get the push you deserve!

The Importance of Stretching

stretching-flexibilityHave you ever noticed how sore your muscles can be a day after a heavy workout?  Some of that soreness could be alleviated by stretching after a powerful workout.  Stretching has to do with elongating the muscles that you were contracting during training.  It is important to stretch your muscles to help retain flexibility and avoid injury.

After I use the elliptical, I stretch by doing side and forward lunges.  As with all aspects of exercise, do not over do it.  Generally, I tend to use static stretches without bouncing.  It is an awesome idea to hold stretches for a significant amount of time (20 to 30 seconds) in order to get the full benefit of the stretch.  Stretches should feel good. You should not feel pain.  Remember, we are all built differently and we have our own range of flexibility.  Do what feels right for your body.  Definitely, incorporate this into your training routine!

Secrets of a Recovering Food Addict

binge-eating-disorderI would like to confess old eating habits that kept me in secret misery.  I use to privately pig out so no one would know how much I am binging.  If anyone knew the amount of take out I was devouring I would have died of embarrassment.  If there were a family dinner, I would usually make a secret trip to purchase fast food before attending a family gathering.  Typically, I would go to Mc Donald’s and lie about where I was going.  At my job, I was pretending I was on a diet when I was not.

I was constantly thinking about un-healthy goodies and ways of consuming it.  I had no idea what normal portions meant.  It was a slow process for me to recognize that I was addicted to food.  The realization dawned on me gradually.  For instance, one of my early discoveries was that carbs and sugar made me chronically hungry.  Once I truly understood that, I was able to decrease my consumption of carbs.  This strategy resulted in my losing weight and I started to gain confidence.  There is always hope for breaking food addiction.  The first step is to understand that your eating is out of control.  The next step is to take charge and get the quality support you deserve.  If I can recover from a food addiction.. you can, as well!!

Healthy-Snacks-In-Workplace-600x450Snacks play a significant role in your diet because they add variety and are a reward system.  They give us that boost of energy when we need it.  Here are some of the goodies that I like to nibble on: Greek yogurt with or without fruit, cheese, nuts, coffee, sugar-free gum, vegetables and fruit.  Notice that these foods are nutritious as well as tasty.

Generally, I eat refreshments throughout the day.  It is important as with everything else on a balanced diet to snack with moderation.  Remember to avoid munching on too much grub.  If you are craving carbohydrates, select a delectable treat that has nutritional value instead.  As always, be certain to reward yourself with a low-calorie light meal.  Have a wonderful day- today!!!!

Are your Weight Loss Expectations Realistic?

scaleIf there were a quick and easy way of losing weight- we would all be thin.  Of course this is not the reality; weight loss is a serious challenge.  Talking from my own personal experience, I started to lose weight at the rate of 1-2 pounds a week.  I felt disappointed at first, because I wanted to lose about 4 pounds a week.  I now know that was un-realistic.  Fortunately, I did not get discouraged and continued my game plan of eating healthy, organic foods.

I was rewarded with continuing weight loss at a steady 1-2 pound drop every week.  This adds to big weight loss over time.  It is essential to be realistic in your expectations so that you do not get disappointed and quit.  Nutritional experts will advise that 1-2 pounds of weight loss per week is normal and healthy if you are consistent.  It goes without saying that fad diets and quick fixes do not work.  Setting realistic expectations is the first step you need to take in this weight loss process!  Enjoy!
