Dipped Peanut Butter Pretzels

INGREDIENTS

3 Ounces of Chocolate

1/2 Cup of Peanut Butter

25 Pretzels

DIRECTIONS

Line parchment paper on a medium sized pan

Next, place chocolate in a special, medium sized- microwavable bowl & microwave for 45 seconds than add peanut butter until it is smooth. Dip each pretzel in for entire pretzel to be coated. Place pretzel on pan & freeze for about 25 minutes.

Special Endive Treat

INGREDIENTS

1/4 Cup Walnuts

2 1/2 Tablespoons of Honey

1/2 Cup Balsamic Vinegar

2 Tablespoons of Orange Juice

12 Endive Leaves

1/2 Cup of Feta Cheese

2/4 Black Pepper

DIRECTIONS

1. Preheat oven to 300 Degrees.

2. Combine Walnuts & Honey.

3. Combine Honey, Balsamic Vinegar and Orange Juice in small pan. Bring to a boil.

4. Fill each Endive with Special Ingredients.

You will not go wrong with this special flavor & amazing treat!! Very perfect for an appetizer for the Holidays! Very simple to make recipe & the perfect mixture of food!!! So very delicious!!! Each bite of this treat is worth everything! Enjoy this special time of year!!

Mozzarella Cheese BLT

INGREDIENTS

1 Cup of Mozzarella Cheese

1 Tablespoon Peeled Shallots

3 Tablespoons of Light Mayonnaise

1 Teaspoon Vinegar

1/4 Teaspoon of Salt & Pepper

4 Slices of Light Bread

10 Tomato Slices

7 Slices of Bacon

DIRECTIONS

First, Combine above ingredients except for Mozzarella Cheese, Bread and Bacon in Small Bowl. Next, top Mozzarella Cheese, Bacon in between the bread as well as the above ingredients.

Amazing BBQ Chicken

INGREDIENTS

1/2 Cup of Hoisin Sauce

3/4 Cup of Orange Juice

3 Tablespoons of Honey

2 Tablespoons of Vinegar

3/4 Tablespoons of Salt

3 Garlic Cloves

6 Ounces of Chicken

DIRECTIONS

First, pre-heat your oven. Boil the above ingredients for about 3 minutes. Place Chicken on Aluminum Foiled Pan & bake for about 35 minutes. Continue brushing the Chicken with the Special Sauce.

Chicken Corn Chowder Soup

INGREDIENTS

2 Tablespoons of Olive Oil

1 3/4 Cup of Chopped Onion

1 1/2 Tablespoon of Thyme

10 Ounces of Chopped Skinless & Boneless Breast

1 1/2 Cups of Unsalted Chicken Stock

2 Cups of Sweet Corn

1 Teaspoon Salt & Pepper

1/2 Cup Canned Coconut Milk

1 1/2 Tablespoon of All- Purpose Flour

DIRECTIONS

Heat Olive Oil in a pan low heat. Combine Onion, Thyme and Chicken. Stir a few minutes. Add Chicken Breast, Salt, Pepper & Corn for 10-15 minutes. Next, combine Flour & Coconut Milk & keep stirring into soup has thickened with all of the above ingredients combined together.

This is the perfect time of year for SOUP!! Time to get prepared for Thanksgiving. Perfect for leftover chicken after the Holidays- as well! The broth is so thick & delicious! So very amazing! Apple Chicken Salad

INGREDIENTS

1/2 Cup of Light Mayonnaise

1 Tablespoon of Chopped Tarragon

2 Teaspoon of Water

1 Teaspoon of Black Pepper

2 1/2 Cups Chopped Rotisserie Chicken Breast

1 Cup of McIntosh Apples

4 Tablespoons of Hazelnuts

DIRECTIONS

Stir all of the ingredients in a large bowl. Chill this Salad in the refrigerator.

Such a terrific Salad & so very easy to make. Just blend all of the ingredients & there you have a perfect Lunch or Dinner. Perhaps you could add Dried Cranberries or Almonds, whatever you prefer. This Salad is awesome when chilled- as well. Such an amazingly satisfying meal. Enjoy this Recipe!!!

Pea & Chicken Salad

INGREDIENTS

1 1/2 Cup Fresh Sugar Snap Peas

1 1/2 Cups Chopped Skinless Rotisserie Chicken Breast

3/4 Cup of Chopped Bell Peppers

1/2 Cup Onion

3 Tablespoons Red Vinegar

2 Tablespoon Fresh Lemon Juice

2 Tablespoon Dijon Mustard

2 Teaspoon Salt & Pepper

DIRECTIONS

1. Cook Peas (boil water) for 2 minutes until peas are crisp. Next, drain peas & place veggies in a medium bowl. Combine Chicken, Bell Peppers & Onions.

2. Combine Vinegar &  remaining ingredients. Drizzle over Salad.

Seriously, this is so easy to make this Salad!! Such a nutritional salad. This Recipe is wonderful! Please note that you can add more vegetables, fruits or apply additional spices. Such a satisfying, flavorful lunch & leftovers are perfect to be chilled in the refrigerator. No question about this- you will not regret this meal!

 

Chicken with Feta Cheese & Tomatoes

INGREDIENTS

5 Skinless, Boneless Chicken Breast Halves

1 1/2 Cup of Cherry Tomatoes

2 1/2 Tablespoons of Oil & Vinegar

15 Olives

1 Cup of Feta Cheese

Sprinkle the top of the Chicken with Salt & Pepper

DIRECTIONS

Prepare oven for medium heat. Combine Tomatoes & Olives on Chicken. Sprinkle dressing on the chicken. Next, apply Feta Cheese on Chicken.

This entrée is Super & Delicious! Generally, I would pick 6 ounces per each chicken so each person could eat a healthy portion. This meal is quick & simple to make. Also, this meal is perfect for your family. I would include two vegetable sides to this Chicken with Feta Cheese & Tomato Dish!! Be creative with adding spices & seasonings to this chicken- as well! Have fun preparing this incredible entrée!

Amazing Spinach Wraps

INGREDIENTS

2 Whole-Grain Flatbreads

2/4 Cup of Hummus

1 Medium Red Bell pepper- Sliced

1/2 Cup Baby Spinach

1/4 Cup of Feta Cheese

DIRECTIONS

1. Spread each Flat Bread & spread it with Hummus

2. Next, divide the thin bell peppers with spinach & feta cheese. Roll up the wraps & secure with a wooden pick.

Truly, this is a phenomenal Lunch, Snack or Dinner!! Sooo amazing- to say the least! You will crave this so much!! Very delicious & tastes so special. Be certain to add spices to the wrap- as well. INGREDIENTS

1 3/4 Cups of Unsweetened Almond Milk

1/2 Cup Fresh Orange Juice

2 Cups Mixed Berries

1 Banana
