2 Tablespoons of Olive Oil
1 3/4 Cup of Chopped Onion
1 1/2 Tablespoon of Thyme
10 Ounces of Chopped Skinless & Boneless Breast
1 1/2 Cups of Unsalted Chicken Stock
2 Cups of Sweet Corn
1 Teaspoon Salt & Pepper
1/2 Cup Canned Coconut Milk
1 1/2 Tablespoon of All- Purpose Flour
Heat Olive Oil in a pan low heat. Combine Onion, Thyme and Chicken. Stir a few minutes. Add Chicken Breast, Salt, Pepper & Corn for 10-15 minutes. Next, combine Flour & Coconut Milk & keep stirring into soup has thickened with all of the above ingredients combined together.
